The catch is that the coast road from King's Lynn to Wells takes the best part of an hour, so this is firmly second-date territory, something you plan rather than something you suggest on the day. It also tells you something useful: if someone is happy to drive an hour along a Norfolk back road with you, things are probably going well.
Closer to town, Sandringham Country Park offers woodland walks without the formality of a stately home visit. The grounds are open year-round and the walks are easy enough that the point is the company, not the exercise.
